Olive oil sponge cake with lemonade fruit
Olive oil sponge cake with lemonade fruit, yoghurt sorbet & pine shoots. The lemonade fruit is a hybrid citrus fruit found in New Zealand and Australia. It's a cross between a mandarin, orange and a lemon. A lovely way to finish a summer meal.

King Salmon
One of our favourite dishes at the moment. We source our King Salmon from Big Glory Bay Seafood where it is ocean farmed in the pure waters of Stewart Island. It grows slowly and takes time to develop a distinctive flavour profile.
